Homemade Pumpkin Slice and Bake cookies
It is finally Fall and so I decided to try and recreate a version of the slice and bake pumpkin cookies sold in stores without all the junk! They turned out so cute, and highly recommend giving a try! Make sure to message on Instagram @livingspunky with any questions. 🫶🏻
Pumpkin Slice and Bake cookies
Makes about 2 dozen cookies
Dough:
Dry-
2.5 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Wet-
2 sticks softened butter
2 caps of vanilla
1/4 cup maple syrup
1/4 raw honey
1 egg
2 Teaspoons pumpkin for orange dye, or orange food coloring
A few drops of green food coloring of choice
What to do:
1.) Mix dry ingredients in one bowl.
2.) Mix in another bowl together butter, maple syrup, and honey with a hand mixer until creamy.
3.) Add in vanilla, and egg.
4.) Combine the wet and dry together.
5.) Set aside 3/4 cup of dough in one bowl, and another tablespoon in another.
6.) Make the 3/4 cup orange, and the tablespoon green. Make into disks, cover with plastic wrap and freeze at least 30 minutes.
7.) Roll out remaining dough on parchment lined cookie sheet until about 1/4 inch thick, in a rectangle shape. Place in freezer.
8.) Roll out orange dough into a 1-2 inch thick roll.
9.) Roll out green dough into small worm like roll.
10.) Place a metal or plastic spoon to indent the top of orange roll.
11.) Place the green roll of dough here.
12.) Take your plain dough out of freezer.
13.) Place the orange dough at the end of the plain dough and start rolling your plain dough around the orange dough. It’s okay if it cracks just press together until one roll. You should see your “pumpkins on the ends.
14.) Place in freezer, and preheat your oven to 375 degrees Fahrenheit.
15.) Slice cookies to about 1 inch thick, leave a few inches between each slice on a lined parchment paper.
16.) Bake about 10-12 minutes!
