Drop Biscuit Pizza Muffins
These were a big hit with my three boys! They liked them both warm, and cold in a lunch on the go! I loved that I could use had my drop biscuits for a lunch option too. The key to these is to wait until they cool down after baking. A great lunch to prepare ahead of time too! Enjoy!
Drop Biscuit Pizza Muffins
Makes 12 muffins
Ingredients:
6-8 drop biscuits, broken into bite size pieces, or any biscuits of choice
1/4 cup Marina sauce
1 cup Cheddar cheese, divided in half
Add choice of fresh mozzarella, pepperoni or any favorite pizza toppings.
1 teaspoon garlic powder
What to do:
1.) Preheat oven to 350 degrees Fahrenheit.
2.) In a bowl mix together biscuits, sauce, 1/2 cup cheddar cheese, garlic powder, and other toppings of choice .
3.) Add to greased muffin pan.
4.)Add other half of cheese to top.
5.) Bake about 12-15 minutes
6.) Let cool before removing. Store in the fridge.
Drop biscuits
Makes 12 biscuits
Ingredients:
2 cups all purpose flour
1 Tablespoon baking powder
1 teaspoon salt
1 stick cold salted butter, cut into 1 inch pieces
1 cup whole milk, or buttermilk
What to do:
1.) Preheat oven to 400 degrees Fahrenheit.
2.) In a medium bowl mix together flour, baking powder, and salt.
3.) Add cold butter cubes and mix into flour mix with a pastry cutter or fork until about pea size.
4.) Mix in milk.
5.) Add to a lined baking sheet. I scoop about a 2 inch biscuit into not the sheet. Leave them imperfect!
6.) Bake about 12-15 minutes until golden.
